1kg lamb forequarter cutlets or loin chops
2 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, crushed
1 tbsp fresh chives, chopped
2 tbsp fresh mint, finely chopped
1 tbsp parsley, finely chopped
1 tsp fresh thyme leaves
1 tsp lemon rind
