Lemon and Herb Lamb

Serves: 4 - 6

Ingredients

1kg lamb forequarter cutlets or loin chops
2 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, crushed
1 tbsp fresh chives, chopped
2 tbsp fresh mint, finely chopped
1 tbsp parsley, finely chopped
1 tsp fresh thyme leaves
1 tsp lemon rind

Method

  1. Combine all ingredients except lamb in a large bowl. Mix well to combine.
  2. Add lamb and turn to evenly coat. Cover, and place in the fridge to marinate for at least an hour.
  3. Preheat a large frying pan or grill to high heat. Cook lamb for 4 minutes per side, turning once only. Serve with steamed spring vegetables or a fresh salad.
